I was talking to my mom about Boston, we were talking about how we spend so much time together. She brought up how literally almost everything she learns she will learn from me. She is my little mirror. It put some pressure on me to step up my game in all aspects of my life. Now, there is tons I should improve on, I need to be kinder, go to church more, and stop biting my nails. But what I have been working on to begin with is my health.
I seriously drink four sodas a day along with a bunch of other junk. I am proud to say that I have only had one soda in three weeks. I have stopped with the majority of candy and other bad foods. I have been running three miles every other day as well.
I am a total freak about what Boston eats... She is so healthy, for dinner she had mushrooms, blueberries, and whole grain rice. Since I still want yummy foods I have been looking for new recipes. I found this little gem to try out; today I made homemade granola... And it was so easy and so good! So here is the recipe, let us know if you like it?! Trust me if I can make it anyone can, I usually end up ruining hard-boiled eggs and have to call Dayne and Sam for instructions.

Ingredients:
4 cups rolled oats
1 cup sliced/chopped almonds
2/3 cup shredded coconut
1/2 cup coconut oil
3/4 cup honey
2 tsp real vanilla extract
Directions:
Mix ingredients in large bowl, set aside.
Heat oil, honey and vanilla.
Pour 1/2 of wet mixture into bowl and stir.
Bake at 325 degrees for 10 minutes and then add the second half of the wet mixture and stir. Bake an additional 10-15 minutes. Cool on baking sheet and add dried fruit if you want. Store in fridge.
Coconut oil is a bit more expensive and you can use butter but that takes away some of the healthy points... And the coconut oil makes it taste even better! It was close to $6.50 but I will be able to make three and a half batches with it.
We usually have dried blueberries at our home that I think are going to taste so good on it next time. I put them on little containers before putting them in the fridge so they are easier to grab for a snack.
